Recipe- Pasta Sauce

Today's recipe is from Amanda of Vegan Propamanda. It was featured on Vegan Yum Yum and can also be found on the PPK forums. I can't wait to try this recipe out! Thanks for sharing, Amanda!

Pasta Sauce
Serves two

Dry pasta, enough for 2 people
2 Tbs Tahini
2 Tbs Miso (any, but sweet white is what I normally use)
2 Tbs Soy Sauce
2 Tbs Olive Oil
2 Tbs Nutritional Yeast or Yellow Mustard
2 Tbs Lemon Juice or Rice Wine Vinegar
A few cloves of garlic, minced
2 Tbs Mirin (optional)

*All amounts are approximate, play around!

Boil the pasta, drain it, put the pot back on the warm stove. Add all of the sauce ingredients to the hot, empty pot and whisk until combined. Then add the hot pasta back to it. The heat of the pan and the pasta helps melt down the tahini and miso.

This is great with any green thrown in (spinach, broccoli, peas, etc) or really any other vegetable you want.
