Gingered Rice

If you're not a fan of vegan meats, this recipe would be just fine without the crumbles. Experiment with it!

1 lb. of vegan burger crumbles
2 Tbsp. oil
1/2 tsp. ground ginger (or more, to taste)
2 cups water
2 cups quick cooking rice
2 cups sugar snap peas
1 red pepper, chopped

Saute the crumbles in the oil. Add the ginger, water & rice. Bring to a boil & turn down to a simmer. Simmer for 5 minutes, then add the peas & pepper. Cover, remove from heat and let the veggies steam for several minutes.

I have been a vegetarian for six weeks (minus one day I ate fish and shrimp). I am not vegan and I do plan to eat fish now and then. I find that most veggie meats do not go down for me--literally. I am going to try your recipe because I do like veggie crumbles. Plus, I need creative and tasty ways to be a vegetarian!

Do the best you can Lady J! You may find that, like most things, veg gets easier the longer you do it. Feel free to post any questions you run up against here on the blog - there are plenty of veg readers who will be happy to help!

Lady J- have you visited www.vegweb.com ? I post some recipes there and a lot of others are posted there, too, complete with reviews from people who made them. I've found a lot of great recipes on that site!
