Homemade Ranch Mix

Using the Dry Mix:

To make into a vinaigrette, combine 1 tablespoon of the dried mix with 1/4 cup lemon juice or apple cider vinegar and 1/4 cup olive oil. Whisk to combine. Makes 1/2 cup dressing.

To make into a creamy dressing, combine 1 tablespoon of the dried mix with 1/4 cup unsweetened non-dairy milk and 1/4 cup vegan mayonnaise. Whisk to combine. Makes 1/2 cup dressing.
To make into a thick dip, combine 1 tablespoon of the dried mix with 1/2 cup of vegan mayonnaise. Whisk to combine. Makes 1/2 cup of dip.

Garlic Rubbed Roasted Cabbage Steaks

If you love cabbage, you are going to freak out about how good this is. Now, if you are on the fence about cabbage, you need to try this because this might be the recipe that converts you to a cabbage lover.

This is a simple side dish worthy of a dinner party and couldn’t be easier to make. Four ingredients, a couple of minutes to prepare and toss in the oven for an hour.

Ingredients
1 (approx 2lb) head of organic green cabbage, cut into 1″ thick slices
1.5 tablespoons olive oil
2 to 3 large garlic cloves, sea salt
freshly ground black pepper
spray olive oil OR non-stick cooking spray

Instructions:
1. Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1″ thick slices.

2. Rub both sides of cabbage with smashed garlic.

3. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices.

4. Finally, sprinkle each side with a bit of salt and freshly cracked black pepper.

5. Roast on the middle rack for 30 minutes. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy. Serve hot and Enjoy!

Pecan, Cranberry and Wild Rice-Stuffed Acorn Squash
This 'earthy fall harvest' has a mellow sweet flavor that's nutrient dense and perfect for the holidays.

Healthy benefits
Acorn squash is rich in vitamins, minerals, dietary fiber and antioxidant compounds. Regularly eating potassium- and magnesium-rich foods like acorn squash can lessen your chance of stroke, osteoporosis, depression and diabetes.

Wild rice is slightly higher in protein than most other whole grains, and is a good source of fiber, folate, magnesium, phosphorus, manganese, zinc, Vitamin B6, and niacin.

In addition to its anti-cancer properties, cranberries may also lower the risk of cardiovascular disease by lowering “bad” LDL cholesterol, inhibiting LDL oxidation (one of the first steps in the progression of coronary artery disease), lowering blood pressure and inhibiting the formation of blood clots.

Gaining in popularity, kale is an amazing vegetable being recognized for its exceptional nutrient richness, health benefits, and delicious flavor. Kale’s health benefits are primarily linked to the high concentration and excellent source of antioxidant vitamins A, C, and K -- and sulphur-containing phytonutrients.
  
Ingredients 661 calories per serving (serves 2) 
2 acorn squash
2/3 cup uncooked wild rice
3 tbs fresh sage
1/4 cup fresh parsley
2 celery stalks, minced
1 large onion, chopped (1 cup)
1/2 tsp dried marjoram
1 tsp fresh ground black pepper
pinch ground nutmeg
1/4 tsp of sea salt
1/2 cup pecan halves
2 kale leaves, rinsed and chopped with stems removed
1/4 cup fresh cranberries
Preparation
- Heat oven to 400 degrees
- Cut squash from stem to tip. Remove the seeds and place cut-side down on baking sheet. Use a sheet of aluminum foil on pan (makes for easier cleanup). Add 1/4 cup of water to pan. Bake 30 minutes. Let it cool. Reduce heat to 375 degrees.

In medium saucepan:
- Cook the wild rice in water
- Finely chop the sage and parsley

In a small sauté pan (sauté mixture):
- Using little water (not oil) sauté celery, onion and sage over medium heat until softened
- Stir in parsley, marjoram, pepper, nutmeg, salt and pepper
- Add kale at last minute to retain its brilliant color and nutrients
- Remove from heat

When squash halves are cool:
- Use spoon to scoop out the flesh leaving a little all around. 

In a large bowl:
- Mash the acorn flesh coarsely
- Select 10 intact pecan halves for top garnish (set aside for last step), grind the rest
- Select 8 cranberries for the top garnish (set aside for last step), add the rest 
- Add wild rice 
- Add sauté mixture  

Stuff the Squash:
- Stuff the mixture into the squash shells
- Artfully place the pecan halves and cranberries on top

- Bake for 30 minutes and serve inside the acorn shell

Note to vegan chef
This was the first time I used sage as an ingredient. It really is an interesting and earthy herb. I'll be looking to include it in other recipes. Quinoa, buckwheat or millet would also be good grain substitutes.

Be An Educated Etsy Buyer

Etsy also changed their feedback system revoking buyers privacy rights, just so you know.

We rehabilitate, both physically and psychologically, mistreated animals and, if possible, we find appropriate homes for them. In an effort to prevent further cruelty to these animals, we educate the public on caring for companion animals as well as on issues concerning farmed animals. Nestled in fertile farmland in California’s San Joaquin Valley, our two-acre rescue and rehabilitation sanctuary is home to 200+ animals representing thirteen animal species. Thrifty Veggies: The {Not So Secret} Garden

Thrifty Veggies: The {Not So Secret} Garden: Gardens, really, are a great way to save money as a vegetarian or vegan.  You can grow your own produce and save yourself a ton of money, because we all know produce at the market doesn't come cheap!

Some gardening ideas:

*If you have a house, take up a plot in your yard.  You can determine the size based on how much space you have.  Grow whatever plants you feel like growing over the summer.

*If you live in an apartment with a balcony, consider doing some container balcony gardening.  It doesn't take a lot of space, and you can still get some awesome, great tasting veggies when you're done!  Here are some cool photos of container balcony gardens:











*If you just don't have the space, ask a friend if they'd be willing to share some yard space with you.  Afterwards, you can share some of your produce with them!

After your fruits and veggies start to grow, you may find that you have too much for just one person.  You don't want the fruits of your labor to spoil!  SO, get some freezer bags (or those vacuum bag things) and store the leftovers in your freezer.  You can take them out and use them as you need them.

And there you have it: a great way to save money and still have great tasting fruits and veggies!
